Method
- Melt the chocolate in a small bowl placed over a pan of barely simmering water. Add the cornflakes to a separate bowl and lightly crush them. Pour the chocolate over the cornflakes and stir well to combine. Alternatively, melt the chocolate in the microwave in 30 second bursts, taking care to use oven gloves as the bowl heats up.
- Spoon the chocolate cornflakes into 12 mini cupcake cases and press the back of a teaspoon in the centre to create a nest shape.
- Place three Smarties® Mini Eggs on top of each nest. Chill the nests in the fridge for two hours until set and enjoy!
Top Tip
- Break the chocolate into smaller pieces before melting and ensure it’s fully melted before stirring in the cornflakes. You can also melt the chocolate in a microwave-safe bowl in 30-second bursts.
- If your chocolate is too thick or gloopy, you can use a small knob of butter (30g) and a tablespoon of golden syrup to loosen it up for easier coating.
- If you don’t have any cupcake cases, you can lightly grease a cupcake tray and build the chocolate cornflake nests straight into the tray.
