Layering the smooth chocolate shell and creamy mint centre of After Eight®s between gooey brownie mix creates a decadent and fudgy experience that leaves a cool sensation on your tongue afterwards and makes a refreshing after-dinner treat. This is a brownie for a sophisticated palate.

Fun variations

  • Top the brownies with finely chopped After Eights® for an extra choco-mint kick.
  • For even more fresh mint flavour, finely chop 10 mint leaves and sprinkle over the top of the brownies once cooled.
  • Swap out the vanilla ice cream for mint chocolate chip if you prefer – but keep the portions small to avoid overwhelming the minty taste.

Storage and reheating

  • Let the After Eight® brownies cool completely before slicing.
  • For extra fudgy brownies, place the tin in the fridge overnight before slicing. As the brownies cool, the butter and chocolate solidify for maximum fudge factor.
  • Store your brownies in an airtight container in the refrigerator to maintain freshness.
  • Your brownies will last for up to a week, but we doubt they will last that long!
  • To freeze, place individual brownies without touching each other in an airtight container – using a layer of baking paper between top and bottom layers – and seal them. They’ll keep frozen for up to three months.
  • For an oozy brownie experience, reheat the defrosted brownie in the microwave for 45 seconds and serve with a scoop of vanilla ice cream.

  • A 23cm (9in) square baking tin, greased and lined with baking paper

Ingredients

  • For best results, weigh and measure out your ingredients before you start.
  • 200g 70% fat baking spread or butter, plus a little extra for greasing the tin
  • 200g dark chocolate (100g 70% plain dark chocolate and 100g dark mint chocolate)
  • 200g condensed milk, such as Carnation condensed milk
  • 200g caster sugar
  • 4 eggs
  • 130g plain flour
  • 50g cocoa powder
  • 16 After Eight® chocolates

Instructions

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Melt the baking spread and dark chocolate together over a low heat in a saucepan or in 20-second bursts in the microwave. Whisk to combine the mixture.
  3. Add the condensed milk, caster sugar and eggs. Beat with an electric hand mixer or balloon whisk until combined.
  4. In another bowl, combine the plain flour and cocoa powder and sift into the chocolate mixture. Fold with a spatula until just combined and no dry flour remains. Pour half the brownie mix into the tin and spread it to the edges with a spoon or spatula.
  5. Place 16 After Eights® on top of the brownie mix. Spoon the rest of it on top and smooth it out. Try not to disturb the layer of After Eight® chocolates.
  6. Bake for 20-25 mins or until risen. Check the brownies after 20 minutes by sticking a wooden cocktail stick into the centre – it should come out with moist crumbs, rather than coating the stick in mixture. If it is still too wet, bake for another 2-3 minutes, then check again – brownies that are too wet may collapse in the middle as they cool. The top should be slightly crusty and the centre should have a slight wobble when you shake the tin. Let it cool completely in the tin before removing and slicing into squares.

Top Tips for amazing After Eight® brownies

  • Use enough parchment paper to have a lip hanging over the edge of the baking tin. This makes it easier to lift the whole brownie out of the tin before slicing.
  • Fold the mixture until combined, but be careful not to overmix it. Too much mixing encourages gluten formation, which will make your brownies tough instead of tender.
  • Bake the brownies in the middle rack of the oven for the most even bake.
  • Unlike cake, it’s always better to slightly underbake a brownie to get that classic moist consistency rather than overbake it and dry it out.
